Each year the organoleptic characteristics of olive oils change and evolve.
Like the wines, each vintage has its peculiarities, its aromas, its potency, its own ardence.This is particularly the case for monovarietal Olive oils: Bouteillan, Grossane, Salonenque, Béruguette, Picholine.The Bouteillan and the Salonenque are the first harvested at CHATEAU D'ESTOUBLON. Follow the Béruguette, the Grossane and the Picholine.
The oils are obtained directly from the olives and only by mechanical processes. They're cold-extracted.These five varieties of olives constitute the assembly of olive oil PDO Valley leases of the estate. Each one plays its own aromatic variations, solo as in assembly.The assembler is the interpreter of these variations, it tells a year, a terroir, an area and must adapt to the organoleptic changes of each variety, from harvest to harvest.This work does not depend on the quantities produced for each variety, but only on aromatic criteria.
