The fundamental principle is to transform fresh fruit just after harvest. However, for some fragile red fruits, it is difficult to assemble lots of the same quality and a bad evolution of them would compromise the quality. Also, at maturity, producers proceed to the freezing of whole fruits. For the exotics, it is directly at the place of production that extraction is carried out after the validation by Alain of the ideal variety and maturity with the local producers. Each daily production is directly bottling. This makes it possible to carry out only one pasteurisation, it is called "light" and also to avoid the passage in vats accompanied by a second pasteurization which would then degrade the quality of the juice.
